Tomato Feta Pasta with Chicken

Ingredients:

  • 300g pasta (penne, fusilli, or your choice)
  • 200g cherry tomatoes (halved)
  • 200g feta cheese (block preferred)
  • 2 chicken breasts (cubed or sliced)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced)
  • 1 tsp dried oregano or Italian seasoning
  • Salt & black pepper to taste
  • Fresh basil or parsley (optional)
  • Chili flakes (optional)
  • Grated Parmesan (optional)


Instructions:

Preheat oven to 200°C (400°F).
Prepare the baking dish:
  • Place the block of feta in the center.
  • Scatter cherry tomatoes around it.
  • Drizzle with 2 tbsp olive oil, season with salt, pepper, and oregano.
  • Bake for 20-25 minutes until tomatoes are blistered and feta is soft.
Cook the pasta:
  • Meanwhile, cook the pasta in salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain.
Cook the chicken:
  • In a skillet, heat 1 tbsp olive oil.
  • Add the chicken pieces, season with salt, pepper, and optional chili flakes.
  • Cook until golden and fully cooked (about 6-8 minutes). Set aside.

Assemble the pasta:

  • Onge feta and tomatoes are done, mash them gently with a fork to create a creamy sauce.
  • Add cooked pasta, chicken, and a splash of reserved pasta water if needed for creaminess.
  • Toss everything to coat well

Garnish & Serve:

  • Top with fgesh basil or parsley.
  • Sprinkle with grated Parmesan if desired.
