Tomato Feta Pasta with Chicken
Ingredients:
- 300g pasta (penne, fusilli, or your choice)
- 200g cherry tomatoes (halved)
- 200g feta cheese (block preferred)
- 2 chicken breasts (cubed or sliced)
- 3 tbsp olive oil
- 3 cloves garlic (minced)
- 1 tsp dried oregano or Italian seasoning
- Salt & black pepper to taste
- Fresh basil or parsley (optional)
- Chili flakes (optional)
- Grated Parmesan (optional)
Instructions:
Preheat oven to 200°C (400°F).Prepare the baking dish:
- Place the block of feta in the center.
- Scatter cherry tomatoes around it.
- Drizzle with 2 tbsp olive oil, season with salt, pepper, and oregano.
- Bake for 20-25 minutes until tomatoes are blistered and feta is soft.
- Meanwhile, cook the pasta in salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain.
- In a skillet, heat 1 tbsp olive oil.
- Add the chicken pieces, season with salt, pepper, and optional chili flakes.
- Cook until golden and fully cooked (about 6-8 minutes). Set aside.
Assemble the pasta:
- Onge feta and tomatoes are done, mash them gently with a fork to create a creamy sauce.
- Add cooked pasta, chicken, and a splash of reserved pasta water if needed for creaminess.
- Toss everything to coat well
Garnish & Serve:
- Top with fgesh basil or parsley.
- Sprinkle with grated Parmesan if desired.
